It has been a looong time since I shared a banana bread recipe with you all and I couldn’t be more excited about this one! Butterscotch Banana Bread. Seriously, why has it taken me so long to think of this one?? I had some leftover butterscotch chips from the Easy Butterscotch Pecan Cinnamon Rolls last week and I was trying to think of what I could use them for… I looked over at the counter and spotted some gorgeously ripe bananas – just perfect for banana bread!

Banana bread is one of those mystical creations that taste good no matter what you put in it. Zucchini, blueberries, peanut butter, heck – even Reese’s! Each version seems better than the last!

I used my sister’s recipe that I’ve been using forEVER and it just never fails to amaze me with how good it is. The bread is so moist, so soft, and honestly, just melts in your mouth. The crunchy exterior is to die for and if it looks like it’s getting too brown, don’t worry about it! Let it bake and the magic will happen.

Remember, how it’s a no TV week this week for the boys? Well, banana bread is yet another recipe that the kids can help with. You really can’t mess it up and for some reason, my little boys LOVE smashing the bananas 🙂

Bryce assumed that since he helped with the bread that the entire loaf was going to be HIS. I kid you not, 2 seconds after I took it out of the oven he was in the kitchen with a fork ready to dive right in. I explained that mommy needed to let it cool so she could get some pictures. He asked “So, like two minutes?” Ha! If only 🙂

As soon as I gave the go-ahead (a mere two minutes later…{wink}) he was gobbling down his first slice. Next thing I knew, I looked over and the THREE slices I had cut for the shots were GONE. Like disappeared. In his mouth. You know what Bryce says to me?? “Mommy, you KNOW I love banana bread!”

    Ingredients

    • 1 1/2 cups ripe bananas 3 to 4 ripe bananas - mashed
    • 6 tbsp butter softened
    • 3/4 cup light brown sugar
    • 1 egg
    • 1 tsp vanilla
    • 1 1/4 cup flour
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1 cup butterscotch chips

    Instructions

    • Preheat the oven to 350 degrees. Peel and mash the bananas.

    • Add in the egg, butter, brown sugar and vanilla and mix until well combined.

    • Combine flour and remaining dry ingredients. Add the dry ingredients and stir just until combined. Do not over mix.

    • Stir in butterscotch chips.

    • Grease and flour a 9 in x 5 in loaf pan and then pour the mixture in.

    • Let the bread bake for 60-65 minutes or until a toothpick comes out clean. Let the bread cool in the pan for at least 10 minutes before removing.
